Walk down any cookware aisle and most pans promise the same thing: nothing sticks. For the first few months, that is true. Then the coating starts to wear. Food begins to grab. And somewhere around year two, the pan that was supposed to make life easier ends up in the trash.
We took a different route. Every frying pan in our collection is coating-free. No layer to scratch, no layer to flake, nothing to slowly disappear into your dinner. Here is why we think that matters.
Coatings are a countdown
A coated pan is at its best on day one and declines from there. Metal utensils scratch it. High heat breaks it down. Even careful owners with wooden spoons are just slowing the clock. A stainless steel pan works the opposite way. It takes a little technique at the start, and then it stays the same for years. Decades, if you treat it reasonably well.
What we chose instead
Our collection covers three coating-free builds, each with its own strength.
Honeycomb stainless steel. The textured surface creates tiny pockets of air and oil between your food and the pan. You get the searing power of stainless with far less sticking, and you can use any utensil you want on it.
Tri-ply stainless steel. An aluminum core between two layers of stainless spreads heat evenly across the whole base. No hot spots, no half-cooked pancakes. It is the construction professional kitchens have trusted for decades.
Titanium. Light, tough, and naturally low-stick once heated properly. If you want one pan that shrugs off daily use, this is it.
All of them work on induction, gas, electric, and ceramic cooktops.
The one habit that changes everything
Cooking on uncoated steel comes down to a single rule: heat the pan first, then add the oil, then the food. Give the pan two or three minutes on medium heat. Add your oil and let it shimmer. Then cook. Food releases when it is properly seared, not before. Fight the urge to poke at it early and the pan does the rest.
That is the honest trade. A coated pan asks nothing of you and quits early. A steel pan asks for one small habit and stays for good. We know which deal we would rather offer.
